We started making a habit of going out to Sunday Brunch every week when we lived in Prescott, Arizona. Before then, we would go out once in awhile but after we got settled in, we just started doing it weekly. I think it was because we had more time, didn't have a dog at the time, and wanted to get to know the area as well as check out local eateries.
We continued that habit when we moved to Phoenix 5 years ago. We would go to church and then out to eat. We didn't have Winslow at the time so we would drive all over the valley to check out interesting restaurants. We really enjoyed the "mom and pop" ones the best rather than chains like say Denny's or IHOP.
During the pandemic lockdown, we would bring in meals from restaurants close by and then once things started opening up again, we continued the tradition of going out. Now with Winslow, we would often go to the first church service (instead of the second one and then out to brunch), come home, let him out of his crate for a bit and then around lunchtime go for brunch.
About 2 months ago, in an effort to save money, we decided to start making brunches at home. We have made Eggs Benedict, breakfast egg sandwiches, scrambled eggs, and huevos rancheros, but not yet omelets because we didn't have an omelet pan to cook them in.
However, this past week when looking through stuff to watch on YouTube while working, I "discovered" a new food channel to subscribe to Julia Pacheco. She had a recipe for making a microwave loaded omelet made in a mug. I showed the video to hubby and I said "let's try it." He agreed. We also had a backup plan just in case it was a flop.
It wasn't a flop!
In our version, we did use the 2 eggs each (so 2 mugs, 2 eggs), 1/4 cup canned spinach each, 1/4 cup Italian shredded cheese each, and about 1/8 cup each of a green pepper we had to use up. We have 2 microwaves; one cooks at 1100 watts, the other at 1200 watts. I put my mug in the 1200 watts one for 1:45 minutes and hubby did his in the 1100 watts for 2 minutes. Both mugs were done at their respective times.

We are spending less than a fourth of what we spent going out to brunch every Sunday. Win-Win situation and everything we have made has turned out delicious!

When I was an older teen, my parents would always take us out for lunch after church. We would go all over and it was fun to try so many places. I have rarely gone to brunch except for when we are on vacation. Do you have the breakfast chain called First Watch? I like avocado toast the best. But I do make veggie cheese omelets in just a small non-stick skillet.
ReplyDeleteBrilliant compromise! I'm going to look for that lady's food channel. Breakfast is my favorite meal of the day. And now that I'm doing Keto (and loving it), most of my favorite fare is low-carb -- eggs, cheese, green veggies and of course, Conecuh sausage. (Is that available in Phoenix?) Have a great new week!
ReplyDeleteI used to make coffee mug omelets a lot when I worked because they were so easy and kept me filled for the morning. Plus I could use a paper coffee cup and then just throw it away! Now I have to admit that I cheat and occasionally buy those "Just crack an egg" scramble kits! Otherwise I have a English muffin or overnight oats.
ReplyDeleteHome made food is the best and cheapest food. For breakfast I usually have a boiled egg,a few spoons of tehina sauce + a tomatoe and half a small green pepper, followed by a cup of coffee. I have to watch my weight, so low-calorie items are on my menu the whole day.

We have to resume our Sunday Sundaes. Or, since the place is so crowded on sun. Go a day of the week. -smile-

We used to eat breakfast out on either Saturday or Sunday (or sometimes both) until I started Weight Watchers in 2012. We are totally out of that habit. I'm fortunate - my husband loves to cook. On Sundays he usually makes an omelet with plenty of sauteed veggies, a mix of eggs and egg whites, and low fat American cheese. No omelet pan, but it comes out good. If I was on my own I would head right to the microwave. I went to your link and pinned the mug omelette and also her healthy blueberry breakfast cake. Both can easily be adapted to Weight Watchers. Making brunch at home is good and even better for the pocketbook but I would miss the weekly outing!! Being retired we each do our own thing during the day but I do the "dinner" thing. Luckily my husband is fine with easy peasy dinners and leftovers!
ReplyDeleteWOW Betty that all looks scrumptious! I am amazed that you can make a good omelet that way. I LOVE omelets! My favorite is spinach with feta. And those potatoes! You all just hit it right out of the park. I love Sunday brunch/lunch and we enjoy going to Waffle House for their delicious and very reasonably priced meals. Either that or Cracker Barrel, where 90% of the time I order pancakes, haaahhaa xoxo Love to Winslow!

ReplyDeleteI'm an oddity in that I don't eat breakfast (99% of the time) and we don't have any sort of special Sunday food. I love-love-love breakfast food itself (your homemade brunch looks absolutely dee-licious!!!) but I like to enjoy it after 12-noon. Biscuits & gravy are my very favorite along with some fried eggs. Our favorite watering hole... a biker bar in the next town over... serves the best biscuits & gravy on the planet. Sometimes we take a ride on the bike and head on over for that but it's not a regular thing by any means.

DeleteFirst off Bud & I lived in Tucson for over a decade (I miss the desert beauty)...now on the Texas coast and enjoying our retirement near the beach. I ❤️ Arizona! As for breakfasts...especially Sunday (if we decide to go out) is the Cracker Barrel's specials. Pancakes, 2 eggs, 2 bacon, 2 sausage, and home made buttermilk biscuits. Deeeelicious.

Well I have never heard of an omelet in a cup. Looks great . I like to make oatmeal and add blueberries and walnuts, and of course bacon is always a treat.
